Solita's Philippine Menu showcases the beloved breakfast dishes from her childhood, including fried rice, longganiza (Filipino sausage), tapa (cured beef), adobo (chicken and/or pork braised in garlic, vinegar, oil, and soy sauce, or cooked until dry), sinigang (meat or seafood in a sour broth), pancit (noodles), and lumpia (fresh or fried spring rolls).
In 2008, Solita introduced a new Filipino Menu, highlighting classic dishes from her home province of Pampanga, renowned for its rich culinary traditions. Pampanga is considered the culinary capital of the Philippines. Filipino cuisine, while influenced by Malay, Chinese, and Spanish flavors, is characterized by its simplicity in cooking techniques. These include boiling (nilaga), grilling (ihaw), roasting, and steaming (halabos). Over generations, these cooking methods have become an integral part of Filipino culture and continue to shape the demand for healthier, more traditional cooking today.
